Petites Baguettes Bretzel.

Un peu de Boulangerie pour ce soir !

Je vous ai proposé mercredi la recette d’un sandwich aux saveurs Mexicaines dans un pain Bretzel en forme de petites baguettes. Vous retrouverez la recette du sandwich ici –> Bretzel Sandwich.

Oui mais et les Pains Bretzel dans tout ça ??

Place donc à la recette des petits pains Bretzel ! Ils sont honnêtement délicieux ! Moelleux à l’intérieur et légèrement croustillants sur l’extérieur. Comme les Bagels (!! ici !!), ils ont besoin d’être pochés pour obtenir cette texture si particulière ! A vos fourneaux !

- 60g de beurre fondu

- 1 càs de sucre

- 2 càc de sel

- 180g d’eau chaude

- 180g de lait 1/2 écrémé

- 1 sachet de levure boulangère instantanée

- 600g farine T55

- 2l d’eau

- 160g bicarbonate

- un peu de lait

- Cheddar, gruyère ou Gros sel pour les gratiner si vous le souhaitez

- Dans le bol de votre machine à pain, mettre le beurre fondu, le lait, l’eau chaude, le sucre et le sel, .

- Ajouter la farine et saupoudrer sur le dessus la levure boulangère instantanée.

- Lancer votre machine à pain sur le programme pâte (15min pour moi).

- Huiler les parois d’un bol, y placer la pâte en la tournant pour que l’huile recouvre les 2 faces et recouvrir d’un film plastique huilé.

- Laisser pousser 1h ou jusqu’à ce que la pâte double de volume.

- Une fois ce temps passé, séparer votre pâte en 9 boules d’environ 115g chacune.

- Former des boudins à partir de ces boules, les déposer sur une plaque de cuisson recouverte de papier cuisson.

- A l’aide d’un couteau les fendre légèrement en diagonale à 3 reprises (comme sur la photo ci-dessous).

- Laisser reposer votre petites baguettes 30min.

- Préchauffer le four à 230°C.

- Porter 2l d’eau à ébullition dans une grande casserole et y ajouter le bicarbonate.

- Les pocher 30sec (15sec sur chaque face) 2 par 2 puis les reposer sur la plaque de cuisson.

- Les badigeonner de lait et saupoudrer la garniture de votre choix (Cheddar, Gruyère, gros sel ect …).

- Enfourner jusqu’à ce qu’ils deviennent dorés environ 10-12m.

- Les laisser refroidir sur une plaque de cuisson.
